Donna at "Way More Homemade" is having blog carnival today to share favorite Christmas baking recipes. My mom made the recipe below for Thanksgiving and it would definitely be good for Christmas too. As a matter of fact this cake is good any time of year...or day...or night...or morning...or afternoon. It is just yummy any ol' time and gets even better after a day or two in the fridge:Pumpkin Gooey Butter Cake
Cake:
1 (18 1/4 oz.) package yellow cake mix
1 egg
8 T. butter, melted
Combine cake mix, egg and butter and mix well with electric mixer. Pat the mixture into the bottom of a lightly greased 13x9 baking pan.

Filling:
1 (6 oz.) cream cheese, softened
1 (6 oz.) cream cheese, softened
8 T. butter, melted
1 (15 oz.) can pumpkin
1 (15 oz.) can pumpkin
2 c. powdered sugar
3 eggs

1t. vanilla

1 t. nutmeg
To make filling: In a large bowl, beat the cream cheese and pumpkin until smooth. Add the eggs, vanilla and butter and beat together. Next, add the powdered sugar, cinnamon, nutmeg and mix well. Spread pumpkin mixture over cake batter and bake for 40-50 minutes in 350 degree preheated oven. Make sure not to overbake as the center should be a little gooey.
Ice with cool whip.

Canned pumpkin is one of the things I cannot get here :-( I am able to, however, occasionally find a piece of fresh pumpkin in the produce section of the store. Never a whole pumpkin. Not sure why. Thanks for sharing!
